Green Bean White Curry

Ingredients & Prep: Estimated Time 10 Minutes
Add 1/4 cup of oil to deep pan and heat on medium heat for five minutes. It's important to use a deep pan to ensure all the ingredients cook evenly.
Add the 1/4 chopped onion, 1" long piece of ginger that has been roughly chopped,4 peeled whole garlic cloves, and 5 curry leaves to the warm oil. Saute the ingredients on medium heat for 1 minutes.
1 lb green beans ( Cut ends of each side. Cut Bean into 3 parts at a slant)
1/4 of medium size onion ( peeled and diced)
4 Cloves of Garlic ( peeled and sliced thin)
5 Sri Lankan Curry Leaves ( Optional)
1 Teaspoon Turmeric
3/4 teaspoon salt ( you can add more or less depending on your preference)
1/4 Cup of Oil ( Grapeseed, Olive, or Coconut)
1 Cup Water
1/4 Cup Milk ( Regular Cow Milk or Coconut Milk)
Part 1: Estimated Time 20 Minutes
Heat cast iron pan or skillet on medium heat for 5 minutes.
Add 1/4 Cup Oil to pan and heat oil for additional 2-3 minutes on medium heat.
Add diced 1/4 of medium onion to pan and saute onions on medium heat till golden brown 5-7 minutes.
Add Sliced garlic and curry leaves and saute for 2-3 minutes on medium heat till garlic becomes fragrant.
Add 3/4 teaspoon salt and 1 teaspoon turmeric to pan and stir to evenly incorporate the spices on the onions, garlic, and curry leaves for 1 minute on medium heat.
Part 2: Estimated Time 16 Minutes
Add 1 lb cut green beans to the pan. Make sure the cut green beans are cut in three parts at a slant to ensure faster cooking. Saute the green beans on medium heat for 4-5 minutes, till the green beans are nicely coated with the spices, onion, and garlic and the green beans are slightly roasted.
Add 1 Cup Water to the beans and boil the green beans on high heat for 10 minutes or until the water has evaporated and the green beans have cooked thru.
Lower heat to a low flame and add 1/4 cup of milk. Stir the curry a few times so the yellow of the ingredients blend well into the milk for roughly 1 Minute.
Pour into a bowl and serve with rice.
